Cut mango into 1 inch pieces; you should have 2 or 2 1/2 cups of packed fruit (I used frozen). Combine in food processor with lime zest and puree until smooth scraping down the sides as necessary.
Transfer the puree to a medium bowl and stir in water, sugar, and lime juice. Whisk until completely dissolved.
Poor the mixture into a 9 inch square baking pan. Put the pan in the freezer and stir well every 30 minutes for about 3 hours scraping crystals from around edge into center. When mixture is too frozen to stir cover and freeze over night.
When ready to serve, use a fork to scrape the mixture into shaved ice working in rows from side to side and turning the pan.
So my exam is over! I’m pretty happy about that. Who am I kidding, I’m elated! Anyway I decided to treat myself to a new sewing machine… finally. So me and Chase went out there and test drove a few and picked what we thought was the best one. It was a hard decision to make. I narrowed it down to two- one a true viking husqvarna, the other a huskystar (their american counterpart). I ended up going with the viking and although the saleslady tried not to persuade me one way or the other, once I had paid for it she told me I had picked the better machine. The huskystar has a whole lot of bells and whistles but in the end I thought that I should stay in keeping with my overall goal and go with the classic. More on that later though. Ok, so I almost didn’t want to post cause I was too busy playing and I’m already itching to get back to it. I have precious few days of summer break so I want to make the most of them. To test out all the features I made Chase a little tag toy… you’ve probably seen these before. It’s a little washcloth sized blanket with ribbon loops all around the edge that simulate tags, aka her favorite part of any toy.
Back to playing and watching 49 up. It’s pretty good so far but I don’t necessarily see it as giving any closure more so than the other ones so I’m curious to see where they take it.
So my exam is tomorrow. Seeing as how I’m running out of time to study I’ll pretty much find any way to avoid it. You wouldn’t believe the kinds of things I’ve resorted to just to keep myself from having to focus. It’s not pretty. I have officially surfed to the end of the internet. I just can’t wrap my head around how it’s possible that there can be NOTHING to do online. I just don’t see how it’s possible to be bored with the whole world at your fingertips but it is.
Whatever, I’ve never failed a course and I don’t intend to start now. BUT if something were to go horribly wrong I figure I’ll just have to make up those credits fall of 08, no biggie, right?
Did I tell you that Chase has her very own library card? Well of course she does silly! Right now we have Maisy’s Rainbow Dream… she loves it. It’s a big oversize book and she can really get a good look at the pictures.
Oh, and I figured out the new scavenger hunt items. I’ll send out the email either tonight or tomorrow sometime. I still have to figure out what the prize is. Part of me thinks it should be announced up front so everyone is dying to win it ;)
Now to figure out dinner… I wish Five Guys delivered. I put up the recipe for the carbonara. I omitted the bacon obviously (because it looked suspicious to me) and it was still very good and super simple.
How cute is that card? It waives late fees on children’s materials if you can’t get around to bringing the books back on time.

Come to think of it, I don’t think I posted yesterday either. Yesterday we applied for baby girl’s passport. You’re probably thinking what the hell does she need a passport for. Yes, folks, infants need a passport to travel to Canada. I made this appointment last week. I had to wait a whole week for the lady to charge me 85 bucks and watch us sign our names on the form that we filled out. It was so ridiculous. I felt like shouting just use a gun next time! The least she could have done was smiled while she took my hard earned cash. But I digress. I should have scanned the photos we got of her before I submitted them. This is gonna be one funny passport.
This morning, before we left to run errands, I asked Chase if she was wearing her whites to play tennis or golf. She said,neither, I prefer lacrosse. Chase got her first lacrosse stick today and seems to have taken to it like a fish to water.
We finished up our errands and came home. I got this lounge wear set that’s awesome. I picked it up cause it was so soft but when I got home and read the tag it said made from soy and bamboo to feel like cashmere. You wouldn’t believe it, but it totally does. I allowed myself to watch only one cooking show today and caught an episode of Everyday Food. Everything they made looked reall good but I didn’t feel like frying chicken so I made the teryiaki wings and the chocolate macaroons for dessert. I served the wings with steamed rice and salad. We had bleu cheese today instead of our regular vinaigrette as a little treat but honestly I don’t think I like it as much. It’s really more of a treat for Ben.
So, lastly, two funny things. I was shopping in Hampden last week when one of those shopfront psychics made eye contact with me while handing out coupons. You want me to read your palm? No, thanks I say. Cute baby she says, boy or girl. I say nothing and keep walking content that I’m not missing any really good info cause this lady is a quack. I mean honestly, you tell me if it’s a boy or girl, you’re the psychic. Ridiculous! But only almost as ridiculous as my trip to CVS. I won’t say what I bought and don’t infer too much from the illustrative video cause I wasn’t buying condoms! Anyway, suffice it to say that the merchandise could have been wrapped in a discreet brown paper bag. Anyway, I pay and head out the door only to set off ALL the alarms. The cashier is calling me back, Miss! Miss! and has to take it out of the bag to disarm it before I could leave. Sigh. It reminds me of an episode of the Golden Girls… :)
There’s an extra long Office tonight, weee can’t wait, I’ve only got half an hour to post. This morning was Chase’s four month visit. She is weighing 18lbs 11oz! That’s up from 13lbs 13 oz two months ago. Can you believe that?! She’s measuring at 25.75″ up from 23″. She was such a trooper she cried for a minute but stopped as soon as the nurse took the needle out. I gave her tylenol before we left the office and she crashed for an extra long morning nap. When she woke up she was fine. Much better than the last time. It really didn’t seem to affect her at all. He told me to wait to give her solids and not to stress about her waking up at night so I guess that’s it for now. He’ll see her back in two months, until then we’re just steady as she goes.
I made a recipe from Fine Cooking’s March 2007 issue. It was pretty good. Warm french lentil salad with smoked sausage. Again, I thought that the flavor could have been a little more intense on the lentil side. The sausage was uber smoky and I don’t think that the lentils could really compete. I was probably most disappointed because I had read someone else’s opinion of the walnut oil that I had originally bought to make this saying that it was flat and flavorless. So I went out and bought a roasted walnut oil because the flavor is supposed to be more intense. 10 bucks later, the smell from the can was out of this world but it really didn’t translate to the vinaigrette. Next time, I would maybe use all walnut oil and omit the evoo. You can see the link posted on the recipes page. It takes you to some other jerko’s blog. I wouldn’t put too much faith in what he has to say about it, he used the wrong kind of lentils. Anyway, I didn’t feel like retyping and reposting the recipe for nothing. I’m updating the ipod and out of usb ports so I’ll have to upload a pic later. I served it alongside a salad and goat cheese toasts. The toasts were the best part IMO.
I also put up the orzo recipe. Ben has been eating the leftovers for lunch which is really, really rare considering that there are bagels in the kitchen so I’m thinking it was better than I thought. I know it’s cheating to use their picture but I didn’t take one. I’ll have to try and get one tomorrow when he heats it up. That about wraps it up for today. Here’s hoping that the office makes me almost pee my pants as usual.
Yes, ladies and gents… she’s back! I picked up my computer today. It’s like learning to walk. I have to relearn the keyboard but am ever so happy just the same.
I got some new music that I have to get onto the ipod so I can actually listen to it. I heard Brett Dennen on the radio yesterday and thought it sounded pretty good. I’m curious to hear what the rest of the cd sounds like. There’s a new Akon song on the radio too. Sounds very Bob Marley like or maybe just more like Bob Marley than I thought it would. I never pegged him as having a propensity for reggae. Sarah, when people use the word propensity, do you immediately get a visual of McKinley and think “leaning towards?” Cause I do and it’s a little weird… but a testament to mnemonic devices I suppose.
As you can see, my bench came. It’s awesome I love it. Ben acts so aloof but I know he loves it too. Way down deep inside but social conventions don’t allow him to show it.
Not a whole lot else happened today. Tomorrow Ms. C has her four month appointment. More shots… can’t wait for that. She’s so sweet. I took her to work today and the cleaning ladies almost had a stroke over her. Meanwhile one of the ladies asks the one that speaks the best English if the father’s a gringo. Ben demanded to know if I defended him but I kept my mouth shut. You guys have seen the Korean nail place episode of Seinfeld right?
