Crepes are Delicious

crepe.jpgWHY? Why would you go on national television and do something like that? And his hair… oh, the humanity! You guessed it, it’s Wednesday and I’m feeling all Top Chefy even though they’re showing the functional equivalent of a clip show. I made another chicken dish tonight. I mean I did have like 20 lbs of boneless skinless thighs but it’s ok because I did a totally different preparation. Getting to my point.. I watched JP make crepes on his show this weekend and have been thinking about them ever since. A half cup of flour and a half cup of milk with an egg, a pinch of salt, and a tablespoon of sugar yields two nice crepes. I spread mine with blackberry jelly and ben filled his with chocolate chips and heath bits. Two crepes unfortunately are not enough to satisfy two sweet tooths… teeth? Teeths? Whatever. So tonight Ben learned that heath bits don’t melt quickly and needless to say I’m still scheming about what I could get away with eating at 11pm. Read the rest of this entry »

Zucchini with Parmesan

zukes.jpgI tried this today because I saw her make this on her show last week. I bought zukes at the farmer’s market this weekend for that specific purpose. That’s why I made them tonight as a side dish even though the dish had nothing to do with the chicken I served it with. They were fine together but I wouldn’t make them together regularly. Here’s where you can find the recipe. I only made half the recipe and I added a clove of garlic. It really didn’t need garlic and I wouldn’t add it again. I loved eating zucchini this way. It was so tasty and not mushy at all. I mean honestly, there’s cheese all over it. Unfortunately I now have three bandaids on. I was grating parmesan and the chunk broke and wham I’m grating my knuckles AND fingertips on the box grater. Have you ever seen what grated fignertips look like? Not pretty.

Baby Girl In Print!

baby-in-print.jpg This arrived in the mail on Monday. It’s a project that Ben worked on a while back.. the cover is just a perk. Today was pretty good. I did a lot of reading this weekend so my days are a little bit easier to manage than normal. I don’t have to read furiously during each nap time. In addition, I was able to prep dinner before my afternoon class so that once I was home all i had to do was toss it in the over. That worked so nicely. I’m going to try to do that every Tuesday and Thursday but it all hinges on how much reading I have or haven’t done. I’ll write more about the recipes in a separate post. Big Girl

jacket4.jpgChase got a big girl jacket today. I’ve been trying to put together the core of her fall wardrobe. I like to buy the core items at babies r us for undershirts et al and Costco for jams and basic pants and tops outfits. I like costco for basics because they have low low prices on nice brands like Carters. They have the same cute things that they have at Babies r us but for like 3 or 4 bucks less per item. So as it stands I probably have all of the pyjamas and underclothes she’ll need, a hoodie and cute little poncho style sweater a jean skirt and jeans and a few other things. AND a new jacket. Feeling Fine

raspberries.jpg(No, not in the creepy Simpsons/The Shining kind of a way… just fine). I was highly highly productive today. A madwoman with a drill gun. I decided to stop waiting for Ben to get around to the little projects that get pushed back every weekend and to just do them myself. I installed a towel bar in the bathroom upstairs, fixed the doors on the tv cabinet and finished putting the casters on the storage bins under the bed upstairs (ok that was never his project but it involved the drill gun nonetheless). I was really on a roll. The thing is all of those projects involved putting screws into wood. There are still a ton of other things that need to go up but I’m not that confident about putting screws into wall board. We’ll see how much longer it takes for me to get tired of waiting for him to put the mirror up in the downstairs bathroom. More surprising is that it’s not broken yet as it’s been leaning up against the wall in there for damn nigh a year now. Read the rest of this entry »

Couscous with Roasted Red Pepper, Lemon & Feta

couscous.jpgI made this one up on my own. You will need to follow the package directions for two servings of couscous. I believe that’s about a cup of couscous and 3/4 c of water with a dash of olive oil and a generous pinch of salt added. Once all the water has been absorbed add one roasted red pepper chopped into bite sized pieces, another scant tablespoonful of olive oil, the juice of half a lemon and 1/4 cup of feta. Toss all of the ingredients together to combine and season to taste with salt and pepper. Voila! It Came!

new-rug.jpgThink the pets approve? Finally! It’s here! And I was ever so patient. It’s the best couch ever. Now we just have to figure out what to do with the big empty wall that faces it. This endeavor will be just that much trickier now that I’m not working full time and am still on the debt free (well except for student loans of course) bandwagon. We’ll see what we can drum up. We’ve had good luck so far. Chase and I put on our bargain hunting shoes today and went looking for a rug. Success! The rug we found has the colors from both the walls and the rug and was a fantastic deal to boot. We also found a tiny table to position behind the wedge piece but the lamp we found is too small so to my desk it goes.

I know all of the pictures look the same but the colors are different in all of them and I couldn’t for the life of me tell which was the most accurate representation so I just uploaded all of them. You can also see that we got a big new gate to separate the living room from the foyer. The dogs are like um… lady, you forgot to let us into the living room! Ha! They can only come in when I say so now. Only Francis defies control of any kind. Only brick and mortar can stop him. Read the rest of this entry »

Three Bean Salad Redux

I should tell you that after the first day the flavor of the salad was much improved. The sweetness mellowed significantly and I found it a lot more palateable. I think that I would still reduce the sugar some if making it again. I already lost one of the two batches of green beans that I bought from the farmer’s market to indecision. I won’t be doing that again with this in my arsenal. Ben didn’t even really identify it as salad so I was able to sneak it by him plus he loves chickpeas.

TGIF

Not that it makes much of a dif but whatever. So how has your week been? Thursday is lawschool Friday because there are no classes on Fridays so this is the technical end of our week. How did it get here so fast though? I feel like it was just yesterday that we were at Donna’s. We didn’t go today as I had some salmon and tomatoes to use up. I made the fresh tomato sauce again and just served the salmon along side. I really like the tomato sauce and find it very flavorful. Since we were so good tonight I’m thinking we’ll probably do dinner tomorrow night. I could use the night off from cooking anyway.

So, Wednesday I had to drop something off at UPS and decided to run into Target since it was nearby. I go through the whole store picking stuff up and get to the register to find out that I have a purse but no wallet. Awesome!
