I should tell you that after the first day the flavor of the salad was much improved. The sweetness mellowed significantly and I found it a lot more palateable. I think that I would still reduce the sugar some if making it again. I already lost one of the two batches of green beans that I bought from the farmer’s market to indecision. I won’t be doing that again with this in my arsenal. Ben didn’t even really identify it as salad so I was able to sneak it by him plus he loves chickpeas.
