I got the idea to make apple dumplings from the Silver Spoon cookbook (another library find). I was going to use their recipe too but I got carried away and well the truth is I couldn’t find the vanilla sugar and didn’t feel like looking for it anymore.
These dumplings were dead east. I rolled out a sheet of puff pastry to 1/8 of an inch and cut it into four pieces. I peeled and cored the apples and set on in the center of each pastry square. Then I filled the center of each apple up with brown sugar, sprinkled the top with some cinnamon and 4 or 5 dried cranberries. Next, I pulled the corners together at the top of the apple and pinched them together to seal it shut. They baked at 350 for about 40 minutes.
We ate one each for dessert but I’m thinking my number two won’t last the night. How much puff pastry is too much to eat in a day?
