Don’t worry, I didn’t do anything crazy like make my own pie crust. This is the quick and dirty ready at 10 version of pie but it was so worth it. GAWD, this pie is good or maybe even lawdy. Yes, it’s that good. Even Ben is eating it and was dancing around asking when it would be ready and he is notoriously anti fruit dessert.
My friend Melanie mentioned this recipe to me. I think she made it herself but I never followed up to find out how it turned out. The beauty of it is, that assuming you make your own crust, you can get two pies out of the single recipe rather than just one.
That being said, I whittled down the number of apples we have left nicely but now I have two pies and no idea whether it will freeze well or not. Anybody had success freezing something like this? I’m wary because of the sour cream. I don’t want it to freeze it and have it come out all curdled after defrosting. Some neighbor might seriously luck out!
Did you have a nice weekend? Mine is not quite done yet but since I will most likely waste the better part of my free time tomorrow it had might as well be. We have plenty to get done though. I need to start making some serious lists and then actually work on the crossing stuff off of them.
