I sat here last week probably much like I am doing right now. Except, instead of Project Runway I was probably watching something to do with food. Somehow I got it in my head that I wanted a piece of this cake. Actually, I just mentioned that I wanted a piece of tres leaches cake and this was the recipe I was forwarded. It looked good but I know I can trust anything that Erin endorses.
It’s been a long time since I’ve had a piece of tres leches cake. It’s not like it’s a cake that I’ve had many times before but the last time, at Rosa Mexicana, certainly made an impact. I wanted to recreate it a little so I thought a little dice of mango would be the ticket. Unfortunately you can’t really think mango and have it be ready to eat instantly. I diced it up but it didn’t add anything to the cake because it was under-ripe.
Essentially, this ended up a dry run. I’ve never made a sponge cake but now I know I can do it and this one tastes pretty darned good. I’ll make another one as soon as there’s some fresh fruit at the market. Peaches, mmm.
It’s been a long time since I’ve had a patron margarita too. That’s another tragedy I have to make right. I have some thoughts about that too.
