I should have known better. I can always trust her opinion. As I sit here typing I’m eating the last slice of blueberry buckle. I bought two pints of berries last weekend. One to eat and one to bake. You know the whole me and fruit desserts thing. So I baked them into this yummy coffee cake with blueberries and cinnamon streusel topping.
It didn’t blow me away right out of the oven but somehow it gets better with age. Licking the plate, I wish I had another last piece better. Even Ben ate multiple pieces and he’s as against fruit desserts as I am for them. I’m trying to cash in on summer produce. By the end of the long weekend I’d also crossed eat a whole cantaloupe and half a watermelon off my list. I chalk it up to staying hydrated. Plus, I shared some of the cantaloupe with Chase.
**The only thing I did differently was to use a straight sided cake 2″ deep cake pan. I couldn’t be bothered to risk the pan avalanche that digging for the springform would have caused.
