It’s summer in Maryland which means we’re eating about a dozen ears of corn and a whole watermelon weekly. A perfectly boiled ear dressed with a little butter and salt is totally delicious but I’ve been wanting to try this Mexican style grilled corn for a long time.
I used this recipe except, and you know how the rest of this sentence goes, I didn’t. I did mostly follow the recipe but I subbed Feta for the cotija cheese because that’s what I had. I thought it was delicious but I was kind of sad about that because how do you choose between two delicious toppings? So I decided that grilled corn gets this preparation otherwise I’ll stick with the traditional butter preparation. Yum! The next thing I want to try are these pickles.

After The Pizza this is the recipe that I get the most requests for. It’s a great versatile tomato sauce. This week I used it on leftover chicken cutlets to turn them into chicken parm, again tonight as pizza sauce and I’ll probably use it once more this weekend as sauce for ravioli before sticking any leftovers in the freezer. When Avery is all grown up with a career and a family of her own and she calls me to tell me that she’s never been so tired I will tell her…
You couldn’t possibly be more tired than the summer you were two. The summer you gave up your nap waaaay ahead of schedule just to keep up with your sister. You ended up so tired that you did things like poop your pants and bump your head repeatedly on flat or protruding surfaces at, above or below head bonking level. You also peed on the couch and lost your shit at every single business establishment that we visited and mostly over food. I love you dear but that summer was wild.
That’s what I’ll tell her.

Or in other words, I think I can… I think I can. You take a week off from writing and then it doesn’t seem to come quite as easily anymore. Before we left we talked about data plans and wifi and whether or not we should totally disconnect and, in the end, I don’t think either of us touched a computer all week. There was lots of Uno, digging in the sand, kite flying, roasting marshmallows and generally lolling about the place (check out the vintage flame orange fire place!). Then of course there was also the grueling drive and, oh, the lost camera. It’s found now but poor Ben was beside himself for a minute. So I feel like I’ve finally got a handle on keeping my kids occupied except that it’s not Saturday today it’s only Wednesday and we still have days to go until the end of the week. The holiday was nice though. It’s fun to have an extra day right smack dab in the middle of the week. So far the week is going like pool, party, pool party. The girls are beat. It’s great. We were away most of the weekend for Ben’s youngest sister’s wedding. We didn’t travel far but we were gone for a couple of nights. I didn’t realize how infrequently we travel and don’t stay in someone’s home. The times when we have stayed in a hotel have been few and far between… and always kind of sucky which is why I was pleasantly surprised to find a couple of days away to be no big deal.
