It’s summer in Maryland which means we’re eating about a dozen ears of corn and a whole watermelon weekly. A perfectly boiled ear dressed with a little butter and salt is totally delicious but I’ve been wanting to try this Mexican style grilled corn for a long time.
I used this recipe except, and you know how the rest of this sentence goes, I didn’t. I did mostly follow the recipe but I subbed Feta for the cotija cheese because that’s what I had. I thought it was delicious but I was kind of sad about that because how do you choose between two delicious toppings? So I decided that grilled corn gets this preparation otherwise I’ll stick with the traditional butter preparation. Yum! The next thing I want to try are these pickles.
