Five Day Weekend

The last several days have been a whirlwind of cold and wind and snow but we have somehow managed to keep warm and power through. I could not have done it without the five families that either took in or sent over some or all of their children to entertain/be entertained. It kept us all sane.

Otherwise, I spent the time cleaning out the fridge making a number of worthy recipes to keep our bellies full. These recipes are fridge cleaning powerhouses!

Recipes that are good: 

Lentil Soup with Ham– I cut the recipe by half but still added the whole 7 cups of stock, maybe more. Very tasty and I used up the last of some luncheon ham, the ends of containers of brown and green lentils, and an opened bag of kale.

English Muffins– to eat alongside the soup and then again for dinner as breakfast sandwiches. Didn’t use much up with this one but it did solve the dinner question and they were very popular!


Cranberry Pumpkin Bread– as a little something sweet. This used up a can of pumpkin and a package of fresh cranberries still lingering in my kitchen from the holidays. What I like about this recipe (aside from being good) is that it uses the whole package of cranberries (or can, I just dumped it all in and it was fine even if more than the two cups called for). It makes a scary amount of batter, an impossible amount but it works. Promise. And it’s better on the second day. Eat one and put one in the freezer.

Last but not least. It's not cookies but it will have to do.
